Safaris, Sunsets & Sweet Dreams: Unveiling Kafunta Safaris New Sunset House

In the heart of Zambia, where the spirit of untamed Africa comes alive, lies the enchanting South Luangwa National Park. Renowned for its breathtaking landscapes and being the birthplace of walking safaris in Africa, this park has captivated the hearts of adventurers and nature enthusiasts for generations. As the sun sets on the horizon, Kafunta Safaris is poised to introduce an unforgettable chapter in the park’s story with the eagerly anticipated Sunset House, set to open its doors in November 2023.

South Luangwa National Park: An African Eden

Nestled in the eastern part of Zambia, South Luangwa National Park is a wildlife haven often dubbed a hidden gem. Despite its relatively low-key reputation, this park teems with diverse ecosystems and an impressive array of animals. The Luangwa River, a lifeline for the park, meanders through the landscape, attracting wildlife like a magnet. From its banks, you can observe elephants bathing, crocodiles basking in the sun, and some of the 400+ species of birds found in the area. However, what truly sets South Luangwa apart is its staggering leopard population, often described as one of the best places on the planet to spot these elusive cats.

Getting to South Luangwa National Park

The journey to South Luangwa is an adventure in itself. Begin by booking a flight to Lusaka, Zambia’s capital city, where you’ll land at Kenneth Kaunda International Airport. From there, a short domestic flight from Lusaka with Proflight Zambia or ProCharter takes you to Mfuwe, the gateway to South Luangwa.

Grilled Pineapple Tartlet Recipe

  • 1 fresh pineapple
  • Oil for grilling
  • 2 tablespoons of brown sugar
  • Sliced almonds
  • Ice cream or whipped cream
  • Caramel syrup
  • Fresh mint leaves (optional)

  • Begin by preparing the pineapple. Remove the outer skin and the bottom, and then cut it into thick slices. You may choose to remove the core, but it is optional.
  • Preheat your grill or a grill pan and lightly oil the surface to prevent sticking.
  • Grill the pineapple slices for about 4 to 5 minutes on each side, ensuring they have nice grill marks and a slightly caramelized appearance.
  • Once the pineapple slices are done, place them on a plate and immediately sprinkle both sides with brown sugar. This will create a natural caramelization and add a golden color to the slices.
  • To assemble your grilled pineapple tartlet, place two pineapple slices on a serving plate.
  • Top the grilled pineapple with a scoop of vanilla ice cream or a dollop of whipped cream.
  • Sprinkle with sliced almonds for added crunch and texture.
  • Drizzle some caramel syrup over the tartlet for extra sweetness and a glossy finish.
  • If available, garnish with a few fresh mint leaves to add a touch of freshness and color.
  • Enjoy your delicious grilled pineapple tartlet as a delightful dessert or treat!
